Hey there!! I am so excited to share this yummy recipe! My mom made this recipe for myself and my siblings our entire life and this is my take on it! This recipe is super hearty, great for those colder nights (or any night really), and it comes together super easily! I hope you all give this one a try and let me know your thoughts!
Serving: 3-4
Ingredients:
- 1 pound of ground turkey (can also use ground beef if you prefer)
- 1/2 yellow onion diced
- 2 bell peppers (any color is fine)
- 1 jalapeno diced (seeds included; can also omit if you don’t like spicy)
- 1 packet of taco seasoning mix
- 1/2 packet of ranch seasoning mix
- 1 can of Rotel
- 1 can of diced tomatoes
- 1 can of pinto beans (drained)
- 1 can of kidney beans/ red beans (drained)
- 1 can of corn
- Salt to taste (sometimes I add extra cumin and cayenne, but you don’t have to.)
What To Do:
- Dice your onion and peppers
- Saute diced veggies in olive oil over medium heat
- Once soft, add in ground meat and cook through (about 10 mins)
- After meat if cooked through add in remaining ingredients (kidney beans, pinto beans, corn, tomatoes and seasoning packets)
- Top with water (about 1 cup)
- Bring up to a boil, once boiling, drop temperature and simmer for 15-20 mins
- Top with your favorite toppings (cheese, sour cream, avocado, chips, etc.)
